A green maftoul and herb salad for Organic September!

It's Organic September and what better way to celebrate than with a delicious organic salad made with our Great Taste Award winning organic maftoul. 
Fresh herbs and maftoul salad for Organic September!

Makes 2 generous portions 
125g Zaytoun organic handrolled maftoul
15g parsley, finely chopped
15g basil. finely chopped
50g green pepper finely diced, seeds removed
75g courgette finely diced 
1 spring onion, finally chopped
1 garlic clove, finally chopped
1/2 tsp ground cumin
1tbs cider vinegar
2-3 tbs Zaytoun organic olive oil
100g halloumi cheese, grated
250ml vegetable stock

1. Rinse the maftoul in cold water, then add to the stock and bring to the boil. Simmer for 12-15 mins.
2. Remove from the heat and combine with the finally chopped onion, garlic, pepper, courgette and herbs.
3.  Whisk the oil, cider vinegar, salt, pepper and cumin together and drizzle over
4. Gently stir in the halloumi cheese, drizzle with a dash of olive oil and sprinkle wtih extra herbs.
5. Serve warm and enjoy!
